The Chef of the French residence gives you his favorite sweet snack recipes, recently used for the Christmas party organized for the staff of the Embassy’s children.

Ingredients
1l milk
500g flour
10g salt
6 eggs
100g melted butter
50g sugar
2 vanilla pods

How to prepare

  • In a big bowl, mix together the flour, salt, sugar and eggs.
  • Slowly add the milk while firmly stirring to keep it from forming lumps.
  • Add the vanilla seeds after gently removing them from the pods.
  • When the batter is smooth, pass it through a cheesecloth to remove lumps.
  • Add the butter.
  • Cover the bowl with plastic film or a clean piece of clothe and leave it to settle in a chilled area for 30 minutes.
  • When ready to prepare the crêpes, lightly grease a frying pan. Pour a ladle of batter in the pan. When the crêpe can be detached from the pan, turn it over and brown the other side.
  • Serve with sugar, jam, chocolate sauce, etc. and enjoy!

Ingredients
4 eggs
250ml milk
125g flour
20g sugar
50g melted butter
1 pinch of salt
2 vanilla pods
Icing sugar

How to prepare

  • In a big bowl, mix together the flour, salt, sugar and egg yolks.
  • Slowly add milk, melted butter and the vanilla seeds.
  • When the batter is smooth, add the egg whites, beaten until firm. Leave it to settle.
  • Pour a ladle of batter in the waffle iron and cook it until the waffle is golden.
  • Top the waffles with icing sugar or serve with chocolate sauce.

Ingredients
75g soft butter
200g sugar
20cl milk
250g flour
3 eggs
1 package instant yeast
150g chocolate bar

How to prepare

  • Pre-heat the oven to 180°c.
  • Mix the soft butter and sugar. Add the egg yolks, flour, yeast and 15cl milk. Mix well.
  • Beat egg whites and add them to the mixture.
  • Melt the chocolate in a bain-marie.
  • Pour the melted chocolate into the mixture and coarsely blend.
  • Pour the mixture into a loaf tin (or individual tins) and cook for 30/40 minutes (15/20 minutes if individual cakes) at 170°c.
